Bahan :
250 gr ungu, belah 2 memanjang lalu potong 4 cm
50 gr udang ukuran sedang
1 buah tomat, cincang kasar
1 sdt air jeruk nipis
100 ml air
5 sdm minyak goreng
5 tangkai daun kemangi
garam secukupnya

Bumbu Halus :

10 butir bawang merah
4 siung bawang putih
8 buah cabai merah
3 buah cabai rawit merah

Cara membuat:

  • Goreng terong sampai layu, sisihkan.
  • Tumis bumbu halus sampai harum, masukkan tomat aduk sampai layu.
  • Masukkan udang, aduk sampai berubah warna.
  • Tambahkan terong, garam, daun kemangi, air jeruk nipis dan air. Aduk sampai bumbu meresap dan matang.
